I grew up near San Antonio, TX and began baking at 7 years old when my grandmother came up with creative ways to keep me occupied. Always restless and eager to create, I would look to my grandma, Carolina Rodriguez (nicknamed Maw-Maw), to keep me busy with arts and crafts projects. Maw-Maw would also blindly choose recipes from her copy of The Redbook Cookbook and tell me: "Here. Cook that!". Growing up with a chicken coop allowed us to gather our own fresh eggs to use in these recipes. This sparked my passion for art, cooking, and baking.
After graduating from Le Cordon Bleu in Austin, TX at 19 years old, I began cake decorating while working for a high-volume bakery. Since then, I've also worked as a wedding cake artist, executive pastry chef, and bakery development consultant in Seattle, WA.
Tres Lecheria is a culmination of 15 years of pastry experience, bakery ideas, and many long days/nights. I hope you will love these cakes as much as we enjoy making them, and I hope they hold a special place in your heart as they do for my family and culture.
Cubes Baking Co. began when Kevin started selling cube-shaped cakes from his car, a Nissan Cube. The Cube, a 4-layer cake with alternating layers of delicious cake and fillings, available in multiple flavors, was born. Cubes Baking Co. expanded to offer flan, chocoflan, Mexican wedding cookies, Jr. Cubes, cupCubes, and other seasonal items. Most of our offerings are inspired by Mexican pastries and pan dulce, and cake flavors using Mexican flavor profiles inspired by our favorite snacks growing up in Southern Texas and California.
